As the season gets colder we naturally crave warm comforting foods. According to the ancient Indian tradition of Ayurveda our bodies crave these foods because they help lubricate our system. We need to shield our body from the dryness that the Fall chill can bring forth. In order for our skin and body to remain fresh and moist, it’s essential that we adjust our meals according to the season. Swap out that cold salad for a nice warm stew. Here is one of my favorite recipes that will keep you satiated during the colder months.

Hearty Vegetable Stew

Serves 4

Ingredients
1 medium onion, chopped
1 medium carrot, chopped
1 cup button mushrooms, chopped
3 medium potatoes, chopped
1 medium turnip, chopped
4 cups water
4 tsp. vegetable base, seasoned vegetable stock or vegetable broth
12 oz. diced tomatoes
2 Tbsp. ghee
Garlic, fennel, and peas
Cilantro for garnish
Salt, pepper to taste

Directions
Saute vegetables in ghee until they begin to soften. Add water and vegetable base and bring to boil. Add tomatoes and spices and simmer for half an hour until vegetables are done but not mushy.
